Here are some hypothesis on why it might be popular.
The shapes are a clear read
The subject matter is relatable
It engages multiple senses, texture engages your sense of touch, and there are a variety of flavors that become evoked. Sour. Savory. Sweet.
All 3 points have more to do with making choices than actual drawing. A big part of an illustrators job is making choices.
Shapes & Subject
As an elder millennial from California, I can also attest that we are still obsessed with avocados.
People love food! And I agree, the textures evoke flavors which is really pleasant :)
